I'm asking as in my story, each character is racing to see how fast they can fight and win 50 fights. How would I classify winning a fight or losing a fight if no one is allowed to kill another and if no one wants to surrender?
What should be the difference between winning and losing a fight?

When you can't get back up, so beaten down that you literally can't stand back up.
OR
Whoever draws first blood
OR
Whoever successfully knocks the other person down.

When the person become unconscious, can't move for thirty seconds or submit.
Or
It could be like a tag system: for example, each person has a ribbon/badge/hat/etc. that can be stolen by opponents. Who ever keeps their item the longest is the winner.
Or
Like in paintball, each player has a "fatality" area on their outfit/uniform, and if the other person can tag it with paint or something, they "kill" that person.
