Depends on the era, but I’ll focus on their 5th-14th century form and their modern form.

…in silence, pull out the weapon from their hide and inspect it, wondering just what material it was made from. They’d look for the attacker, make brief eye contact, then attack with little mercy. On a good day.
On a bad day, they’d probably scream and thrash around, and if their attacker were to be small, as in human sized, they’d surely be crushed. If not, Mhocta would probably engage in a battle to ensure that the intruder never even think about them.
In their modern form, Gatzi is more toned down and relaxed, though they’d probably make a face that implies “oh, you stabbed me…”. If they want to keep a human persona, they might crumple to the ground, but most of the time, they’d probably just pull out the weapon and try to figure out the reason of attack.
