You get the gist. I've been craving this recently for some reason. I have several ideas and it doesn't just have to be any of the monsters I listed. It could be a Dragon, Demons, Siren, Fairy, Shapeshifter, or Witch.

Sure! Any preference on who you would want to be before I read off scenarios.
I have loads of supernatural characters, but I'm content either way. Whichever one best suits your plot!
I'll let you choose after the scenarios then.
- The Hunter catches the Monster but doesn't kill them right away (for a reason the hunter will decide).
- Reverse. The Monster catches the hunter but doesn't kill them (also for reasons the monster decides).
- The Monster and the Hunter are friends, with neither of them knowing what the other is, only to find out when one of the is caught.
- The Monster finds the Hunter hurt/unconscious and decides to help them because they don't know much about (race that the hunter is) and their curious.
1 and 4 certainly have my attention, though I'm leaning a little more towards 1 if I'm being honest. (I'm a sucker for that kind of stuff.)
Me too! Would you like to be the hunter or monster? (If my preference influences your decision I would rather be the monster for both scenarios but I can be either.) If you do allow me to be the monster though you can choose what my character is.

We could also try for both if you wanted, and alternate character roles? So like, I take the hunter for 1, you take the hunter for 4, or vice versa.
But anyways, most of my hunters are indiscriminate when it comes to supernatural creatures, so I'm confident I could work with whichever monster you choose to play :)
We could mix the scenarios. The hunter catches the Monster, lets them go then the monster finds them injured and returns the favor

Also for the love of me I can decided to tween two monsters so pick so would you rather be a Witch or a Shapeshifter/Skinwalker hunter?

Although, for clarification, is this going to be an animal shifter or someone who can steal other people's identities? And if it's the former, are they a single animal shifter or can they turn into any animal?
Let's go with they can shift into any animal but it takes extreme effort to do so.

(Real quick, do you have a problem with LGBTQ relationships? Because I was think of having the character be gender fluid sense they can literally change it if they wanted to.)

Before sounds about right. And however you picture it is fine—I'll have Vic react accordingly.

Sage shivered as a cool winter breeze, pulling her furs closer to her as she trudged through a mostly abandoned part of the city. Most people in these part were other monsters, not many hunters daring to get too close to this part of town because of the high population of monsters. She was only out this late at night because she had been visiting a witch for special clothing that would hopefully stay with her through transformations. Her coyote fur already did but that was because it had become part of her once the curse was passed to her.
Victor walked along the same street in the opposite direction, nearing Sage with every step. He began the night without a target in mind, but something about the approaching figure screamed suspicious to him. He just couldn't place what.
This part of the city may have been a monster hub, but that didn't mean humans didn't pass through every now and then. He begrudgingly let the figure pass without incident, then slowed in pace to enter a nearby alley. He paused for a few moments there, shedding his jacket and ball cap and hiding them behind some trashcans. Ruffling his hair, he plastered on a grin and wandered out into the street again, keeping close enough to Sage that he wouldn't lose track of them, but not too close to arouse suspicion, he hoped.
Now to tail them until something happened.
Sage kept walking, ignoring the man that passed her before turning down an alleyway. She decided to shift into a different form to get home faster. She shifted into an owl, one of her favorite forms, picked up the leather messenger bag she carried her old clothing in and took off, flying just above the alleyway to navigate her way.
"Crap," Vic hissed to himself, doubling back the few paces he needed to return to the alley. He'd heard stories of shapeshifters, but he'd never before encountered one. If he gave up now, it might be some time before he found another, and he was getting bored with the usual hunts.
Moving fluidly, he snagged his jacket and tossed it over his shoulder, leaping high enough to grab the edge of the lowest floor of the fire escape and gathering enough momentum to pull himself all the way up. Without pause, he practically flung himself up the stairs, taking them two at a time, until he reached the roof.
The shapeshifter was on the far side of the building, about to cross over the next roof, but Vic was confident he still had a chance.
He bolted across the cement, whipping his jacket off his shoulder and opening it as far as he could. Barely giving himself enough time to brace for a rough landing, he leaped over the gap between buildings and held out his jacket like a net.
He didn't have time to register if his attempt worked or not before he and the jacket slammed onto the other roof, although he distantly noticed a leather bag lying beside him.
Vix wasn't able to to catch Sage in his jacket, but he was able to knock them off course enough to cause her to shift back to her human like form. The witches words were true, thankfully her clothes stayed with her when she formed back. Sage scrambled to her feet, looking around for her bag when she realized what or who had grabbed her.
"A hunter?" She thought, staring at her bag, close to the man. She shifted into a wolf form, growling at the man.
Groaning at the unwelcomed impact, Vic pushed himself into a sitting position and scowled when he saw his prey several feet away from him, certainly not captured as he had hoped.
"None of that, now," he said dismissively, grabbing the bag and standing. He tossed his jacket over his shoulder again and casually pulled a gun from the holster at his hip, turning off the safety with an audible click.
"Do I need to go over the whole spiel?" he asked, waving the gun in her general direction. "This gun shoots silver bullets which, if I recall correctly, is more than enough to slow your kind down. Perhaps not as effective as if you had been a real werewolf, but it should do the trick."
Shut up, he told himself, and just go for the kill. Monologuing is how all the movie villains die. Do you really want to have that in common with them?
And yet, he didn't shoot. Call it morbid curiosity, call it suddenly-having-a-heart—he didn't know. But killing the shapeshifter seemed to be such…a waste.
Sage stared for a bit longer before shifting back to her human form. She could run and leave the bag but that was the only possession she had the was rightfully hers.
She was a cursed skinwalker, meaning that she was bitten or scratched by another skinwalker. This meant that she didn't have the abilities of full blood skinwalkers had, such as literally being able to steal other peoples skin and black magic. If fullbloods end up cursing someone they usually help the other a bit at first before going on their way. Her full blood taught her to shift, helped her get her fur and gave her that messenger bag. She wasn't willing to give it up yet.
"What do you want, hunter?" She growled, knowing if he wanted her dead he would of shot her by now.
Vic blinked, then sighed. He lowered the gun, finding it proper to cease threatening them after they'd (sorta) done the same.
"Question of the year," he mumbled under his breath before refocusing his attention.
He wasn't entirely sure where to go from there, shifting his weight uncomfortably like this was some awkward first date.
"I don't really know," he finally answered. "Usually I just take out monsters, no questions asked, and turn in some sort of evidence so I get my bounty." He paused. "But you don't really seem like you're causing any chaos, and to be honest, I've never interacted with your kind before." Vic shrugged. "Guess I just acted on instinct when I saw you take off."
It wasn't an apology, but it was as close as he was going to get to giving one. That said, he still wasn't sure where to go from there. It wasn't really in his nature to just…let a monster go.
Sage relaxed slightly when he lowered the gun. She furrowed her brow as she looked him up and down, trying to decide if he was lying.
"Could I have my satchel back then?" She asked, holding out her hand. "It only has clothing in it."
That was mostly true. Her satchel held her old clothes, and a few magical items that she usually wore but hadn't put back on yet.
The hunter worried his bottom lip between his teeth as he considered it.
"…What I don't understand is, if there's really only clothes in this bag, why haven't you left already?" he finally asked, unfurling the satchel's strap and holding it out in front of him at arm's length. "Surely this isn't worth risking your life over? Which leaves me to believe that either there's something of value in this bag, or you're just a sentimental person. And considering the situation I've put us both in, I can't just trust that you'll just peacefully leave if I give this to you," he mused, the final words coming out as more of a mumble.
He sighed. "Besides, your abilities are pretty incredible. Being a hunter and all, I probably shouldn't be, but I'm a tad envious. Being able to turn into practically any animal or—or person? …Can you turn into other people? I think at least some can."
It was a little obvious at this point, but Vic needed to buy all the time he could in order to sort this out. Would his pride really let him release a monster when he had them right in front of him? …He was about to find out. Besides, he really was interested in learning all he could about shapeshifters. With other monsters, there was usually some sort of motivation rooted in evil. Like vampires drinking people dry, werewolves going on killing sprees when there was a full moon, the natural mischief every one of the fairy folk seemed addicted to, etc. He didn't recall something like that with shapeshifters, although he was keen to find out whether that was accurate.
Sage let out a frustrated sigh when he refused to give her the satchel, seeing that he could use it as a bargaining chip.
"Have you…never dealt with a Skinwalker before?" She asked tilting her head a bit at his questions, before deciding to answer them, not wanting to anger the person who had the gun.
"I can shift to many different animals, though some puts more strain on my body than others." She explained. "Though others can, and will, steal other peoples skin." This made her think of her fullblood, who was able to steal peoples skin as soon as they made eye contact with them. It was a surprisingly satisfying thing to watch.
"Did you miss the part where I said I'd never interacted with your kind before?" Vic retorted, channeling every ounce of his sass into the response in order to hide his embarrassment over not knowing. He let the arm holding their satchel drop, lowering his eyes along with it as he processed the rest of what they'd said.
"That's…interesting. I'll have to fact-check what you're saying, of course, but don't take that personally. For all I know, you could be lying to make it seem like you guys are stronger than you actually are," he said matter of factly, raising his eyes to their own. "Like a lizard!" he added eagerly.
Then he frowned. "How hard would it be to shift into a lizard?" he asked, mainly talking to himself before suddenly shaking his head. "Wait, that doesn't really matter. Scratch what I just said. Why didn't you answer my first question?" he asked, gesturing to the bag. "Why risk your life for this?"
