I am new, so this might be a feature already present. When creating an item I can link characters as 'previous owners' - but is there a way to give information linked to each of these like how the ownership was ended, the date range of the ownership etc?

If not, I think being able to do this would be great, as you could keep track of the context of the ownership, and not just the owners.

So far, I only manage to do this by adding a new field for each owner, where the current 'previous owners' field can have multiple characters linked without a new field for each.

as far as i know, the best way to go about it is to add another field. You could just create it as a singular textbox and manually link the characters as bullet points or smth, it seems easier than adding a new field per character esp since it would affect the the template for other items.
