Number one: No, it doesn't have to rhyme. The traditional prophecy at least has a rhythm, but you do you!
Number two: It has to be mysterious. It doesn't have to be so complex, but it can't be crystal clear either. It has to be unweaved throughout the story.

are these the unbreakable prophecies like in Greek mythology or the ones that only sort of apply like in the Norse?
It depends on what you are writing. I try to keep them pretty general, though
