Any Organization tips?

So I'm getting back into an old project with a friend of mine and we wanted to create a Master Doc with everything we know/remember/feel is relevant to the story.
We haven't worked on this story in quite a while and I think this would be a good refresher to just get everything that we can out, all the details, everything. But that's a lot of info.
Does anybody have any good tips on how to do that? like how to organize it, a template we could use, or anything like that would be great!

(If you use partitions on a piece of paper with different types of details that could help)

It helps me to separate everything into specific categories. People and their roles, creatures and owners, places and relations to other places etc.
