Taking to an actual chef about my baking mishaps is wild-
I told her about the marshmallow cookie incident, and she asked me if I chilled the dough, which rack I used, whether I used a cookie sheet or a cake pan-
They were Pilsbury pre-made, pre-cut cookie squares-
Chilling the dough won't actually do anything. It's to harden the oils, but if you do that, you won't be able to scoop the dough untill it's room temp again anyway.

Not me thinking that chilling dough just kept it firmer while baking or something- not much of a Michelin Star over here, I just know enough to not have to eat microwave stuff every day.
Chef was very nice just extremely stressed - I'm working with her for the summer with a couple other folks. Helping kids cook and trying (and failing) to get them to try new stuff.
