I feel like if she could, there wouldn't really be a point. She doesn't really have a use for it and it seems to be work to stretch. Staying like that would probably hurt and take a lot of effort, especially if she were going to keep it exactly the same. Like how holding perfectly is super hard
I bet she'd just make them go bendy but if she was sleeping they'd probably just break. Iirc no one tries in the movies so it's probably not possible for other people to make them go rubber

They help doctors learn (? Probably?) And they keep your body from turning into a skin puddle after you're dead

I would be cremated even if I didn't have bones. Plus, if I was a flesh puddle they could out me in a cool mug and bury that instead.
That would certainly lighten up the event I might just do that
